Crochet this Einkorn Beanie by guest designer from Gayle of @hand_spun_bits. Made from kitten-soft bulky yarn, this beanie hooks up quickly and is sure to keep you cosy all throughout the cold season.
Gayle herself says, “When I designed the Einkorn Beanie, I had two goals in mind. I wanted to design a beanie with a continuous stitch pattern from brim to crown. I also wanted it to work with a bulky yarn so it would work up quickly. I feel this stitch is very interesting to look at. It combines a few stitches for the pattern to create this unique design. I had one hiccup with this design. I could not come up with a name. I put it out to the crochet community and so many people thought this looked like wheat. One of my crochet friends suggested Einkorn. Einkorn is a Mediterranean wheat with a small, bearded ears and spikelets that each contain one slender grain.“

Materials and Tools
- Yarn: I used Yarn Bee Tender Touch. Total amount of yarn used in this project: Approximately 85 to 135 yards.
- Some other great choices are Paintbox Yarns Simply Chunky, Yarn Bee Soft and Sleek, Malagrigo Mecha or King Cole Chunky. Yarn weight: #5 Wt. Bulky yarn
- Hook: This crochet beanie hat takes two crochet hooks, 6.5mm and 8mm.
- Stitch Marker
- Scissors
- Darning Needle
- Tape Measure

8mm hook: 10 HTR x 7 rows = 4” x 4”

Note: this chart is only a guide. You will want your band to measure a couple of inches shorter than the circumference of the person’s head, since it will stretch to fit. Use your tape measure throughout the pattern.
This pattern is in multiples of 3 + 2. You can adjust your starting band as follows: 41, 44, 47, 50, 53, 56, 59, etc.
PATTERN NOTES
Yarn choice is important for this beanie. Choose a super soft #5 light bulky yarn. The stitch pattern works back over stitches, so a soft yarn works best. I used Yarn Bee Tender Touch. Some other great choices are Paintbox Yarns Simply Chunky, Yarn Bee Soft and Sleek, Malagrigo Mecha or King Cole Chunky. Yarn weight: #5 Wt. Bulky yarn
This pattern uses two sizes of crochet hooks. The smaller hook is used on the band. The larger hook is used on the body of the beanie. Please look for hook changes. I have purposely chosen larger hooks for this pattern. It creates a nice thickness for the beanie. Consider going up a hook size if you crochet tight.
The first round of the band is done with FHTR. There are many YouTube videos on how to do the Foundation Half Treble Crochet. Please refer to them.
I suggest you do the invisible join for the band. This is how you do the INV JOIN:
⦁ At the end of the round, remove your hook from the loop.
⦁ Insert your hook from the back to the front into the joining stitch.
⦁ Put the dropped loop on your hook and pull through the stitch.
⦁ Chain as directed and continue with the next round.
Starting with round two of the body, the body is worked in continuous rounds (no join). You will place a stitch marker in the first stitch of the round. You will need to move that marker each round. Please count your stitches.
Pattern is written in UK terms but switchable to US terms below.

Convert Pattern Terms
Here you can quickly switch between UK and US crochet terms. This will make following the pattern easier as all terms will be converted to your preferred version.
Terms & Abbreviations
Chain (CH): Yarn over, pull through one loop on hook.
Double Crochet (DC): Insert hook into the stitch, yarn over, pull the loop through the stitch, yarn over and pull through two loops on hook.
Double Crochet Two Together (DC2tog): This is the decrease stitch. Insert hook into the first stitch, yarn over and pull through the stitch, insert hook into the next stitch, yarn over and pull the loop through that stitch (three loops on the hook), yarn over and pull through all three loops.
Double Crochet in Third Loop (DC3rdLoop): The third loop is found behind the top v of the stitch you are working in. Insert your hook into the third loop of the stitch, yarn over, pull the loop through the stitch, yarn over and pull through all the loops on the hook.
Half Treble Crochet in Third Loop (HTR3rdLoop): Yarn over, insert the hook into the third loop of the stitch, yarn over, pull the loop through the stitch, yarn over and pull through all the loops on the hook.
Foundation Half Treble Crochet (FHTR): Start with three chains on the hook.
1. Yarn over, insert hook into the first chain (or third chain) from the hook.
2. Yarn over, pull the loop through the chain (this creates your first chain).
3. Yarn over, pull through all three loops on the hook (this creates the first foundation half treble crochet).
4. To create your second stitch, yarn over, insert hook into the chain your created with the first step. Repeat step 3. This creates your second foundation half treble crochet.
5. Repeat until you have the desired number of stitches.
Skip (SK): Skip the indicated stitch.
Slip Stitch (SL ST): Insert hook, yarn over, pull through both loops on the hook.
Stitch (ST) or Stitches (STS)
SPECIAL STITCHES
The stitch pattern is: DC 2, LongDC2tog (in other words – DC in each of the next two stitches, LongDC2tog over the two DC just completed).
LongDC2tog – This stitch is worked over the two DC you just made.
- Insert hook into the same space as the 1st DC. (1st leg)
- YO and pull up a long loop.
- Insert hook into the ST a round below the SK ST. (2nd Leg)
- YO and pull up a long loop.
- YO and pull through all three loops on the hook.
DecLongDC2tog – DC2tog, SK1, DC2tog, work the LongDC2tog over the two decrease stitches.

Band: with 6.5mm hook
FHTR 44, 50, 56 INV JOIN. (Measure to see that it is the length you desire for the size you are making)
Band Round 1: CH1, HTR3rdLoop around, INV JOIN. (44,50,56 STS)
Band Round 2: CH1, DC3rdLoop around, join. (44,50,56 STS)
Note: You will want to use the long tail from the FHTR to sew up the gap on your band.
Body: with the L 8mm hook
Step 1 – DC 2:
DC in the first two stitches. Photo 1
Place a stitch marker in the first DC.
The green arrow is the stitch you will skip.
The lower red arrow is important for Step 3 just easier to see here.
Step 2 – Working back over the two DC you just made, LongDC2tog:
Insert hook back into the same space as the 1st DC (DC#1), Photo 2
YO, pull up a long loop.
Step 3:
Insert hook into the space the round below the SK ST (Space below the green arrow and where the red arrow is pointing) Photo 1 & 2, YO, pull up a long loop, Photo 3
YO and pull through all three loops.
Repeat steps 1 through 3 around to the last two STS.
Step 4:
End of Round 2:
DC2 (ends in ST before the ST marker).
LongDC2tog (put the 2nd leg in the ST below the ST marker).
This is where the 2nd leg of the LongDC2tog will go from now on. Photo 4.
(44,50,56 STS)
Round 3 – is a repeat of round 2 except:
When you start Round 3, you have to SK two STS. (The ST with the marker & the next ST).
You always put the 1st DC from now on in the LongDC2tog from the previous round.

The pattern works in a continuous spiral until you reach the height desired.
Repeat until your beanie measures 4 ½”, 6”, 6 ½” in Height (or 2” shorter than your desired height).
Shaping of the crown:
I did not include stitch counts for the decrease rounds. Dec Round 1 & 3 are the same. Your rounds may not end on an exact repeat. Finish the round with the pattern stitch of [DC, LongDC2tog].
Instructions for the DecLongDC2tog
Step 1:
DC2tog (remember to start in top of LongDC2tog from the previous round). Photo 6

Note: the decreases are only in the DC2tog. The LongDC2tog is placed the same way to keep the stitch pattern consistent.
Child Decrease:
Finishing – Cut a long tail. Weave it through your last round of stitches and cinch closed. Attach a tag or pom if desired.
